This is a great dressing for slightly bitter leaves like dandelion or chicory, or to go with a ham hock salad.

Ingredients

Quantity Ingredient
2 tablespoons cider vinegar
1 tablespoon clear honey
1 tablespoon wholegrain mustard
3 tablespoons cold-pressed rapeseed oil
2-3 tablespoons vegetable or corn oil
salt
freshly ground black pepper

Method

  1. Whisk the cider vinegar, honey, mustard and oils together in a bowl or shake in a screw-topped jar or bottle. Season with salt and pepper to taste.
