We developed this dressing years ago – for the classic salad that is topped with grated egg to give the look of a mimosa flower. Very rarely do we make the actual dish but we use the dressing in many other salads.

Ingredients

Quantity Ingredient
1/2 tablespoon cider vinegar
1/2 small lemon, juiced
1 garlic clove, peeled and halved
2 sprigs tarragon
2 tablespoons vegetable or corn oil
2-3 tablespoons cold-pressed rapeseed oil
salt
freshly ground black pepper

Method

  1. Whisk the cider vinegar, lemon juice, garlic, tarragon and oils together or shake in a screw-topped jar or bottle. Season with salt and pepper to taste. Leave to infuse overnight and strain before using.
