Creamed spinach makes a delicious comforting accompaniment to simply grilled meat or fish. It has a feeling of luxuriousness about it the moment you put it into your mouth. Cooked in this way it almost acts like a sauce for grilled meat or fish.

Ingredients

Quantity Ingredient
750-800g spinach, thick stalks removed and washed
salt
freshly ground black pepper
200ml double cream

Method

  1. Bring a pan of salted water to the boil. Plunge in the spinach leaves and cook for 2–3 minutes until tender. Drain in a colander, refresh under the cold tap and squeeze out any excess water.
  2. Tip the spinach into a food processor and blend as smoothly or as coarsely as you wish. You can take it to this stage in advance if you like, then finish at the last minute.
  3. Simmer the cream in a saucepan until reduced by about half, then stir in the spinach and season with salt and pepper to taste. Cook over a low heat for a minute or so, stirring every so often, until the spinach is hot. Serve immediately.
