A vinegar that is on tables in most Thai eating houses as an accompaniment. It is used as a side dish to cut the sweetness of the caramel and to add some heat to the recipe for caramelised pork hock.

Ingredients

Quantity Ingredient
2 long red chillies, thinly sliced into rounds
200ml white rice vinegar

Method

  1. Combine the chillies and vinegar and mix well. Keep in the refrigerator for a week.
