Cooking out curry pastes in rendered pork fat gives the paste a real depth of flavour.

Ingredients

Quantity Ingredient
200g minced pork back fat
1 teaspoon sea salt

Method

  1. Combine the pork, 100 ml water and the salt in a small saucepan and bring to the boil. Reduce the heat and simmer for 20 minutes, stirring occasionally – as the water evaporates, the pork fat will start to melt. The fat should run clear, with some fat particles starting to look like deep-fried crisp bits. At this stage, remove from the heat and strain the pork fat. The crisp bits can be reserved for a garnish.
