100g red bird’s eye chillies

Method

  1. Dry-roast the chillies in a small heavy-based saucepan or wok over a medium heat until slightly caramelised, stirring continuously, for about 5–6 minutes. Cool, then pound in a mortar and pestle or grind in a spice or coffee grinder to form a powder. Store in an airtight container for up to 4 weeks.
