Ingredients

200g glutinous rice, uncooked

Method

  1. Wet the rice, then drain immediately. (This helps the grains to cook evenly all the way through without the outside burning.) Cook in a frying pan over a medium heat, stirring continuously, until golden brown. This will take up to 15 minutes. Pound in batches in a mortar and pestle or grind in a spice or coffee grinder to form a fine powder. Store in an airtight container for 4 weeks.
