500g caster sugar

Method

  1. Combine the sugar and 1 litre water in a heavy-based saucepan over a medium heat and stir until the sugar dissolves. Remove from the heat and leave to cool. The syrup keeps indefinitely in a screwtop jar in the refrigerator.
