Ingredients

Quantity Ingredient
250g long red chillies, seeded
460g caster sugar
250ml white rice vinegar
1 tablespoon sea salt

Method

  1. Blend the chillies in a food processor to form a paste. Set aside.
  2. Put the sugar, vinegar and 250 ml water in a heavy-based saucepan over a medium heat, stirring to combine and dissolve the sugar. Bring to a gentle boil, then stir in the reserved chilli paste and salt. Cook for a further 5 minutes, then remove from the heat and cool.
  3. Keep in an airtight container or jar in the refrigerator for up to a week. Use as a dipping sauce or as a dressing with lime juice.
