Banana and lime sorbet

Next time you’re thinking of making banana cake with your overripe bananas, make this sorbet instead.

Ingredients

Quantity Ingredient
3 ripe bananas, chopped
250ml coconut cream
250ml coconut milk
2 limes, juiced
1/2 lime, zested

Sorbet base

Quantity Ingredient
400ml Sugar syrup
140ml liquid glucose
pinch sea salt

Method

  1. Combine the bananas, coconut cream and coconut milk in a heavy-based saucepan over a medium heat. Bring to the boil, then reduce the heat and simmer for 10–15 minutes, until the bananas are very soft and have become incorporated into the coconut cream. Remove from the heat and allow to cool a little.
  2. To make the sorbet base, heat the sugar syrup in a separate heavy-based saucepan over a medium heat. Stir in the liquid glucose and salt and combine well. Remove from the heat and cool to room temperature.
  3. Put the banana mixture and sorbet base in a food processor and process to a smooth liquid.
  4. Allow to cool slightly, then stir in the lime juice and zest. Strain through a fine-mesh sieve into a large bowl.
  5. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  6. Spoon into individual bowls and serve.
