Passionfruit ice cream

The passionfruit can be replaced with other fruit, such as banana and lime zest, jackfruit or mango, for ice cream in different flavours – you just use the same base.

Ingredients

Quantity Ingredient
500ml coconut cream
200ml milk
8 egg yolks
200g caster sugar
100ml fresh passionfruit pulp

Method

  1. Combine the coconut cream and milk in a heavy-based saucepan over a medium heat and bring to the boil. Remove from the heat.
  2. Beat the egg yolks and sugar together in a mixing bowl with an electric mixer until pale and thick. Stir continuously while pouring the coconut cream mixture into the egg mixture, then whisk together.
  3. Return the mixture to the saucepan over a medium heat and cook, stirring continuously with a wooden spoon, until the mixture coats the back of the spoon. Remove from the heat and leave to cool completely.
  4. Stir in the passionfruit pulp.
  5. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  6. Spoon into individual bowls and serve.
