Steamed banana pudding

This is great as a sweet snack drizzled with some palm sugar caramel.

Ingredients

Quantity Ingredient
90g rice flour
1 teaspoon arrowroot
1 teaspoon sea salt
250ml coconut cream
170g caster sugar
2 large bananas, mashed
1 vanilla bean, scraped
200g fresh coconut, shredded

Method

  1. Preheat the oven to 160°C. Grease a 22 cm square baking tin.
  2. Blend the rice flour, arrowroot, salt, coconut cream and 125 ml water in a food processor to form a smooth paste.
  3. Add the sugar, then the banana and vanilla and blend until well combined.
  4. Pour the mixture into the greased baking tin and seal with aluminium foil. Put in a bain-marie or large roasting tin. Add enough hot water to the bain-marie to come halfway up the side of the baking tin with the banana mixture.
  5. Bake for 45 minutes. Check after 40 minutes – it should be just firm.
  6. Leave to cool, then cut into 2.5 cm squares with a sharp knife and roll in the fresh coconut to coat.
