Seared venison fillet with lime chilli dressing and roasted rice

The salad is spicy and herbaceous and complements the venison’s gamey richness. The addition of roasted rice gives a wonderful nutty flavour. Add some tomato wedges if you wish and enjoy as a shared meal.

Ingredients

Quantity Ingredient
1 tablespoon coconut oil or canola oil
1 x 400g venison fillet
1 tablespoon coriander leaves, shredded
1 tablespoon mint leaves, shredded
1 red asian shallot, finely sliced
1 long red chilli, seeded and julienned
1 teaspoon Roasted rice
10 vietnamese mint leaves
1 lebanese cucumber, cut into wedges
100g cabbage, finely sliced
lime wedges, to serve

Dressing

Quantity Ingredient
100ml lime juice
1 teaspoon Roasted chilli powder
2 1/2 tablespoons fish sauce
3 bird’s eye chillies, finely sliced
2 tablespoons Sweet chilli sauce

Method

  1. Heat the oil in a large frying pan over a medium–high heat and sear the venison until rare inside and caramelised all over, about 10 minutes. Rest for 8–10 minutes.
  2. Meanwhile, make the dressing. Combine all the dressing ingredients in a small bowl or jug and mix well. Taste – it should be hot, sour, salty and slightly sweet.
  3. Slice the venison into rounds 5 mm thick and place on individual serving plates or a serving platter.
  4. To assemble, evenly spread a little of the coriander, mint, shallot and chilli on each slice of venison. Pour the dressing over and sprinkle evenly with the roasted rice. Place a Vietnamese mint leaf, a few pieces of cucumber and cabbage alongside, and serve with lime wedges.

Note:

  • You could also break up some rice cakes if you happen to have some made, and sprinkle them along with the roasted rice for extra texture.
