Tea-smoked oysters with cucumber and ginger salad

This oyster dish is surprisingly easy to prepare and can be served as a salad or a starter. The oysters have a fine flavour after being smoked over a distinctively Thai smoking mixture.

Ingredients

Quantity Ingredient
1 quantity Smoking mix
1 piece banana leaf
12 oysters, freshly shucked
4 tablespoons Sweet soy and ginger dressing
1 lime, juiced
Crisp-fried garlic or red Asian shallots, (use shallots variation), to garnish

Salad

Quantity Ingredient
1/2 lebanese cucumber, sliced lengthways into 3 cm batons
3 cm piece fresh ginger, peeled and julienned
15g coriander leaves
1 long green chilli, seeded and julienned

Method

  1. Line a wok with aluminium foil. Place the smoking mix ingredients on the foil in the wok. Turn the heat to high and start to smoke them.
  2. Meanwhile, line a steamer basket with the banana leaf and place the oysters on top. Put the steamer in the smoking wok. Turn off the heat, cover with the steamer lid and let the smoke infuse the oysters for about 5 minutes. This method gives a caramelised, smoky flavour to the oysters.
  3. To make the salad, toss all the salad ingredients together in a mixing bowl. Pour over the sweet soy and ginger dressing and lime juice and toss to combine.
  4. Add the oysters and mix well.
  5. If you wish, line individual serving plates with pieces of the banana leaf used in the steaming process. Spoon the salad on top and garnish with some crisp-fried shallots.

Note

  • If you’re using large oysters, such as Pacific oysters, you could place the oysters back on their shells after smoking, then spoon the salad over each oyster on its shell, and serve as individual portions.
