Mr Wilkinson’s red sauce (a.k.a. tomato relish)

Ingredients

Quantity Ingredient
500g tomatoes, roughly chopped
1 apple, peeled, cored and roughly chopped
1 white onion, peeled and diced
100g raw (demerara) sugar
70ml apple-cider vinegar
1 teaspoon salt flakes
pinch of cayenne pepper
pinch of ground black pepper
pinch of ground allspice
pinch of ground cloves

Method

  1. Place everything into a heavy-based 3 litre capacity saucepan over a medium–low heat. Bring to the boil then reduce to a simmer and cook, stirring occasionally, for 1½ hours until it has a chutney-like consistency.

    Take off the heat, pour into sterilised jam jars and seal. The red sauce will keep in a cupboard for at least a year. Once opened, store in the fridge and use within 3 months.
