Ingredients

Quantity Ingredient
150g instant polenta
1 tablespoon extra-virgin olive oil
50g freshly grated parmesan cheese, plus extra to serve
1 teaspoon salt flakes

Method

  1. Bring 1.25 litres water to boil in a very large saucepan. Whisking constantly, pour in the polenta and, when it starts to bubble, reduce the heat and continue to cook for 15 minutes, whisking as you go, until thick and smooth. Add the olive oil, parmesan and salt and whisk hard for 30 seconds to combine.
