MR: I’m sure that once you’ve tasted this omelette it will become a firm household favourite. I love XO sauce and vividly remember the first time we made our own at Pope Joan. It was a eureka moment – I couldn’t believe that such a great, complex-tasting sauce could be so simple to make. If you don’t have time to make it or you can’t find it, this will be just as good with black bean sauce or chilli sauce instead.

Ingredients

Quantity Ingredient
6 free-range eggs
1 tablespoon soy sauce
1 tablespoon shaoxing rice wine
1/4 teaspoon pepper
100ml thick cream (double/heavy)
3 tablespoons non–gmo vegetable oil
200g raw prawns, peels and deveined
3 tablespoons XO sauce, plus extra to serve
3 spring onions, chopped
6 coriander sprigs, leaves stripped and stems roughly chopped, plus extra to serve

Method

  1. In a bowl, whisk together the eggs, soy, Shaoxing wine and pepper, then add the thick cream and whisk again.

    Heat 1½ tablespoons of the oil in a large frying pan over a medium heat. Add half the prawns and 1½ tablespoons of the XO and stir-fry until the prawns are just cooked, then pour over half the egg mixture. Stir gently until the egg mixture starts to cook, then reduce the heat to low and cook until the omelette has just set. Scatter over half the spring onion and coriander, fold over the omelette and slide onto a serving plate, then repeat for the second omelette.

    To serve, spoon a little more XO over the omelettes and garnish with a few extra sprigs of coriander.
