Method

  1. Set a stainless steel bowl over a saucepan filled with 3 cm water. Bring the water to a simmer, add 90 g dark chocolate broken into small pieces and melt slowly, stirring to break up any lumps. Remove the bowl from the pan and place on a work surface. Cover a baking tray with baking paper. Tip 80 g almonds into the melted chocolate and stir together well, then pour the melted chocolate and almond mixture onto the baking paper and spread it out to cover the sheet evenly. Sprinkle over a good pinch of salt flakes, then transfer to the fridge to set. Once set, break into bite-size pieces and store in an airtight container in the fridge until needed.
