Method

  1. Preheat the oven to 220°C and line a baking tray with paper. Cut 2 sweet potatoes into thick wedges and arrange these on a baking tray in a single layer. Brush all over with 2 tablespoons extra-virgin olive oil and sprinkle over a pinch each of salt flakes, ground fennel and ground coriander. Bake for 20–25 minutes until crisp on the outside and soft in the middle, then pile into a bowl. Serve with a small bowl filled with 60 g sour cream for dipping.
