Torn fresh figs and grapes with almonds and strawberry balsamic

Whether used in dishes savoury or sweet, figs just rock. I warm the fruit in the oven to give the figs a sun-warmed feel. I like it… a lot!

Ingredients

Quantity Ingredient
6 ripe figs
1 small bunch grapes
1 tablespoon chopped almonds
1 tablespoon caster sugar
2 tablespoons strawberry balsamic vinegar, or plain balsamic vinegar
200g mascarpone

Method

  1. Preheat the oven to 180ºC.
  2. Tear each fig into three bits and place in a small baking dish. Tear the grapes in half, or cut them using a small knife, then add to the figs. Add the almonds and sugar and toss lightly. Place in the oven for 3–4 minutes, just to lightly warm the fruit.
  3. Divide the fruit mixture among serving plates or bowls. Drizzle with the balsamic vinegar. Add a good scoop of mascarpone and serve.
