This is a salad dressing basic we have on hand for so many dishes.

Ingredients

Quantity Ingredient
60ml lemon juice, (juice of 2-3 lemons)
1 teaspoon dijon mustard
1 teaspoon caster sugar
1 teaspoon sea salt
250ml sunflower oil or canola oil
50ml hot water

Method

  1. In a bowl, whisk together the lemon juice, mustard, sugar and salt. Slowly whisk in the oil until fully incorporated, then whisk in the water. The dressing will keep for 6 weeks in an airtight jar in the fridge.

Uses:

  • A good all-rounder for all types of salad leaves, and great for salads containing radish or fruit. Also nice with smoked fish or crabmeat.
