Method

  1. If you don’t have fresh chickpeas, substitute with normal peas or broad beans. Grab yourself a good-sized bowl full of the pods, then slip them out of the pods; hopefully you’ll end up with a good cup or two of fresh legumes. Keep half of them raw, blanch the others in boiling water until just tender, then mix them all together. You could shave some raw asparagus through, if you have some at hand (I would!). To this add a peeled and shaved French shallot, and some crumbled-up feta. To dress the salad you could use caper and raisin dressing, or the simple lemon dressing. Enjoy on toast with a poached egg, or serve alongside some steamed fish.
