Grilled whiting with caper and raisin dressing

I have adapted a memory from my childhood here for this dish, using whiting instead of sardines – but please, if you have amazing sardines or mullet, adapt the recipe to suit. I fondly remember being on the Algarve in Portugal with my dad and granddad, eating for the first time some fantastic fresh, huge sardines, served with a simple salad, bread, and of course some sangria and an icy cold beer.

Ingredients

Quantity Ingredient
4 large whiting, filleted and pin-boned, (ask your fishmonger to do this for you)
60ml olive oil
1 lemon, zested
1 big handfuls rocket leaves, washed
150g greek-style feta, crumbled
2 tablespoons toasted pine nuts

Caper & raisin dressing

Quantity Ingredient
1 tablespoon raisins, soaked in water for 5 minutes, then drained
1 tablespoon salted capers, rinsed
3 anchovy fillets
1 small sweet red chilli, seeded and finely chopped
1 garlic clove, crushed
5 basil leaves, washed and finely chopped
20ml balsamic vinegar
1 lemon, juiced
250ml olive oil

Method

  1. Turn on the oven grill to full heat; if you don’t have an oven grill, heat up the oven until it is really hot.
  2. Meanwhile, lay the whiting fillets on a baking tray, spreading them out so they’re not touching. Mix together the olive oil, lemon zest and some salt flakes and freshly ground black pepper. Spread the mixture over the fish and let sit while you make the dressing.
  3. Using a mortar and pestle, pound the raisins, capers, anchovies, chilli, garlic and basil to a sticky paste consistency. Add the vinegar and lemon juice, some salt flakes and freshly ground black pepper, then fold the olive oil through.
  4. Lay most of the rocket on a serving platter, or on individual plates, and drizzle with a little of the dressing.
  5. Grill the whiting for 3–5 minutes, or until crispy on top and cooked through. Pour the cooking juices over the rocket, then arrange the whiting fillets over the top. Drizzle some more dressing over each whiting fillet. Scatter with the feta, pine nuts and remaining rocket.
