Roast beef leftovers, green beans, watercress and parmesan

I would really like to do a book on what to do with leftovers. It would be pages of simple recipes without measurements – just ideas of how to pair leftovers with other ingredients to make great new dishes.

Method

  1. For this one I would slice up any left-over roast beef into thin strips, place in a bowl and mix with some seeded mustard, a little olive oil and a good dash of balsamic. Blanch a good handful of those small green beans, tear a small handful of watercress into the mix, then shave some parmesan over, using a vegie peeler. Mix it all up, then either enjoy for lunch as a salad, or between two slices of good bread that have been spread with the best butter.
