I love blackberry hunting in the country, but make sure if you are going out picking that you ask permission… and make sure they haven’t sprayed any nasty chemicals onto the plants, as blackberry is considered a weed here in Australia.

Ingredients

Quantity Ingredient
1kg blackberries, thoroughly washed and drained
500g sugar
2 fresh bay leaves
15g citric acid

Method

  1. Place the blackberries in a blender and blitz until smooth. Transfer to a large pot, then add the rest of the ingredients and 500 ml water. Bring to the boil over a medium heat, scooping off any impurities using a spoon. Reduce the heat and simmer for 15 minutes.
  2. Strain through a sieve, then pour into sterilised jars and seal.
  3. Keep in a cool dark place for up to 6 months. Once opened, store in the fridge for up to 8 weeks.
