Method

  1. Simply peel your cucumbers, then cut into finger-width lengths. Lightly salt them to help draw out the moisture, then after a few minutes rinse and dry. Now from here you could do all sorts of things. I’d mix them with a good few spoonfuls of crème fraîche or sour cream, and some sea salt and freshly ground black pepper, then finish with lots of finely chopped herbs such as dill, tarragon and parsley.
