Left-over chicken has so many uses, I almost don’t know where to start.

Method

  1. Take said left-over chicken, pick off all the flesh and roughly chop. To this add some mayonnaise to bind it, and some great-quality madras curry paste. Now some may laugh about this, especially a chef hero who will not be named, but there are some really good pre-made pastes on the market now, so that’s what I would use. Add enough to your liking, mix through some nice sultanas (golden raisins), roasted flaked almonds, and lots of chopped fresh coriander leaves for a great little salad. You could chop up and roast some sweet potatoes or pumpkin to add to this dish, which will only make it more special.
