Whether you have kids or not, strawberry picking is so much fun. There should be a national holiday just to go strawberry picking at a farm for the day. Strawberry, cucumber and black pepper are a classic match, and lovely in a cordial.

You could also place fresh borage flowers into the bottles with the cordial, like we do.

Ingredients

Quantity Ingredient
750g strawberries, washed and tops removed
1kg lebanese cucumbers, peeled
750g sugar
750ml apple juice
20g citric acid
1 1/2 teaspoons freshly ground black pepper

Method

  1. Put your strawberries and cucumbers into a blender and purée. Transfer to a large pot, then stir in the sugar, apple juice, citric acid, pepper and 500 ml water.
  2. Bring to the boil over a medium heat, then ladle off and discard any impurities that rise to the surface. Reduce the heat and simmer on low for 10 minutes.
  3. Strain through a sieve, then pour into sterilised bottles wand seal.
  4. Keep in a cool dark place for up to 6 months. Once opened, store in the fridge for up to 8 weeks.
