Aunty Jane and Uncle Frank played a massive role in my earlier life. Now, Uncle Frank is the gourmet of the family, and word on the street is that he is ready to give me a nudge. This is a play on a chopped salad, but it’s damn tasty and resembles a little bit the salad I have as a memory from my early days working in the pub in Barnsley.

Method

  1. Layer in a bowl, in this order: 1 cm strips of Boston or butter lettuce, torn mint, capers, a spoonful of sun-dried tomatoes, torn basil, a tablespoon each of sliced pickled garlic and onion, then 1 chopped pickled hot chilli. Using salad servers, mix thoroughly, then add splashes of good white-wine vinegar and olive oil. Place in a serving bowl and sprinkle with salt flakes and freshly ground black pepper. Top with shredded carrot and beetroot, some more capers, and some torn coriander leaves. Then as Uncle Frank says, ‘Get stuck in, lovely!’
