An amazing Caesar salad

My friend and for mer boss Lisa Van Haandel has given me her family recipe and it’s a beauty.

Method

  1. The dressing alone should go on just about anything, but I would just dress cos leaves with this dressing, lay them on a plate, then add fried bacon bits, chopped parsley, freshly made croutons the size of your smallest fingernail, and add a few poached eggs crowned with slices of Parmesan. Brilliant in any season, but since my cos lettuce is out of control, it’s the perfect winter salad for me.
  2. For the Caesar dressing, soak 2 chopped garlic cloves in 60 ml white wine vinegar for 10 minutes. Place the whole lot in a blender with 2 egg yolks, a sprinkling of sea salt, 2 teaspoons dijon mustard, 1 tablespoon Worcestershire sauce, 2 anchovies and a little of the oil they were swimming in. Blitz together, then add 190 ml of vegetable oil and 1 tablespoon grated Parmesan. Adjust the seasoning and away you go.
