Kiwi fruit and papaya with lime and chilli

A refreshing salad in winter time, with a hint of chilli to spice up ya life.

Ingredients

Quantity Ingredient
75g caster sugar
pinch chilli flakes
1 tablespoon rice wine vinegar
1 tablespoon vodka, (optional)
1 lime, zested and juiced
4 kiwi fruit, peeled and cut into 8 wedges
1/2 ripe papaya, peeled, seeded and diced
200g labneh, (see glossary)

Method

  1. In a small pot, bring to the boil the sugar, chilli flakes, vinegar, vodka, if using, and 50 ml water.
  2. Stir in the lime juice and zest, take off the heat and chill briefly.
  3. Put the kiwi fruit and papaya in a mixing bowl, pour the chilli syrup over and let sit for 5 minutes.
  4. Place in serving bowls. Add a dollop of labneh and serve.
