Many of my customers at the bakery and tea room absolutely love these brownies – maybe because they combine two of the most appreciated ingredients in baking: chocolate and cream cheese. Usually brownies call for dark chocolate and cocoa powder, but I leave out the chocolate as I like my brownies to stay soft when cold. Here the cream cheese adds a surprising texture, and the result is a double layer of delight!

For the cream cheese topping

120g butter, softened, plus extra for greasing
225g cream cheese, at room temperature
180g caster sugar
3 eggs
4 tablespoons plain flour
2 teaspoons vanilla paste or extract

For the brownies

350g butter, softened
500g caster sugar
150g good-quality cocoa powder
6 eggs
200g plain flour

Method

  1. Preheat the oven to 180°C. Butter a 30 cm square baking tin and line with baking parchment.
  2. For the topping, beat the butter and cream cheese together until creamy in the bowl of a stand mixer or using a mixing bowl and electric hand-held beaters. Add the sugar and eggs and beat until incorporated, then finally add the flour and vanilla and beat on a low speed until smooth. Set aside while you make the brownie mixture.
  3. In a separate bowl, cream the butter and sugar together using an electric mixer. Add the cocoa powder and beat until fluffy. Add the eggs, one at a time, and finally add the flour. Spread three quarters of the mixture into the tin, using a spatula. Top with the cream cheese mixture and finish with the remaining brownie mixture. Run a cocktail stick or the tip of a sharp knife over the surface, to create a marbled effect.
  4. Bake for 30–35 minutes until the brownies start to pull away from the sides of the tin, then leave to cool in the tin until still slightly warm before cutting into squares to serve. Or, for a more fudgy result, leave to cool completely and refrigerate before serving.
