This recipe makes a more traditional pastry cream that holds its shape when baked. It has more flour for added strength, and uses cornflour to help make a thicker custard that’s perfect for holding fruit on our Danishes, or for any recipe where the vanilla custard isn’t strong enough.

Ingredients

Quantity Ingredient
325g full-cream milk
35g unsalted bu
1/2 vanilla pod, seeds scraped
4 egg yolks
90g caster sugar
15g plain flour
20g cornflour

Method

  1. Combine the milk, butter and vanilla (seeds and pod) in a heavy based saucepan, and bring to a simmer over medium heat. Remove the vanilla pod.
  2. While the milk is coming to a simmer, whisk together the egg yolks and sugar in a medium sized bowl, until slightly pale. Add the plain flour and then the cornflour, whisking to combine after each addition.
  3. Gradually pour the milk over the egg mixture, whisking constantly as you go to avoid scrambling the eggs.
  4. Return the custard to the saucepan and cook for about 5 minutes over a low heat, stirring constantly to avoid burning. Alternate between using a whisk and a spatula, as described above. The pastry cream will become very thick and will just start to bubble. It should be nice and shiny, with no lumps. Remove it from the heat and strain the pastry cream through a fine sieve into a clean bowl. Lay a piece of plastic wrap over the surface to avoid a skin forming, then refrigerate to cool it completely. The pastry cream will keep for 3–5 days in the fridge.

Bakery notes

  • When cooking out the custard, I like to use a whisk and a spatula, alternating between the two. The whisk helps to mix everything together thoroughly and to get rid of any lumps as they appear. I use the spatula to scrape the sides and base of the pan, to stop any spots catching while it’s cooking. This results in a smooth, consistent custard with no risk of scorching.
