Ingredients

Quantity Ingredient
500g rhubarb, trimmed and cut into 2 cm chunks
55g caster sugar
150g unsalted butter, softened and diced
200g plain flour
150g soft brown sugar
65g rolled oats

Method

  1. Heat a large heavy-based saucepan over medium heat. Add the rhubarb, caster sugar and 2 tablespoons of water. Reduce the heat to low, cover with a lid and cook for 5–10 minutes, stirring often. The rhubarb should reduce to a chunky paste. Remove from the heat and allow to cool.
  2. Preheat the oven to 180°C.
  3. Rub the butter with the flour and brown sugar until the mixture resembles fine breadcrumbs, then stir through the rolled oats.
  4. Spoon the rhubarb into a baking dish, sprinkle on the crumble topping and bake in the oven for 20 minutes, or until golden brown. Serve with cream or custard.

Variations

  • Nutty rhubarb

    Add 60 g flaked almonds or chopped hazelnuts to the crumble mixture.

    Cinnamon rhubarb

    Add 1 teaspoon ground cinnamon to the crumble mixture.
