Ingredients

Quantity Ingredient
1 tablespoon lemon juice
1/2 teaspoon dijon mustard
salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil

Method

  1. Mix together the lemon juice and mustard in a bowl and season with the salt and pepper. Whisk in the oil.
  2. An even simpler method is to combine the lemon juice, mustard and seasonings in a jar with a screw-top lid and shake to combine. Add the oil and shake again.

Variations

  • Herb dressing

    Add 2 tablespoons chopped fresh herbs to the dressing.

    French dressing

    Swap the lemon juice for red wine vinegar.

    Italian dressing

    Swap the lemon juice for balsamic vinegar.

    Pomegranate dressing

    Add 2 teaspoons pomegranate molasses to the dressing.
