These lentils can be eaten on their own or served with pan-fried fish. You could even serve them with grilled chicken breasts or add some fried chorizo. Use the small French-style green lentils as they keep their shape better.

Ingredients

oil, for cooking
1 onion, diced
1 garlic clove, crushed
2 teaspoon harissa paste
1 teaspoon ground coriander
1 teaspoon ground cumin
125ml french-style green lentils
500ml chicken or vegetable stock
125ml see method for ingredients
chopped coriander leaves

Method

  1. Heat a medium-sized saucepan over medium–high heat. Add a splash of oil and cook the onion for 3–4 minutes.
  2. Add the garlic, harissa paste, ground coriander and cumin. Cook for a further 1–2 minutes, stirring often. Add the lentils, stock and tomato purée, and bring to the boil. Reduce the heat and cook for 45 minutes, stirring occasionally, until the lentils are cooked and the sauce is reduced. Season to taste. Check the seasoning of the lentils and stir through the coriander leaves.
