Roast chicken drumsticks with lime, ginger and honey

Chicken drumsticks take less time to cook than a whole bird, but i love cooking them at a lower temperature for a bit longer so they are really crisp and falling apart.

Ingredients

Quantity Ingredient
8 chicken drumsticks
2 limes, grated zested and juiced
2 small red chillies, seeded and diced
1 tablespoon grated root ginger
4 spring onions, thinly sliced
2 garlic cloves, crushed
salt and freshly ground black pepper
2 tablespoons honey

Method

  1. Preheat the oven to 200°C.
  2. Use a sharp knife to slash the chicken drumsticks through to the bone. Mix together the lime zest and juice, chilli, ginger, spring onion and garlic and season well with the salt and pepper. Pour over the drumsticks and massage well into the chicken flesh. Place in a baking dish and cook in the oven for 30 minutes.
  3. Add the honey to the baking dish and toss to coat the chicken drumsticks. Roast for a further 20 minutes, or until golden brown all over.
