Roast turkey breast with pancetta, sage and onion stuffing

If the turkey breast is of an uneven thickness, ask your butcher to even it out for you.

Ingredients

200g day-old sourdough bread
2 tablespoons butter
4 onions, sliced
2 thick slices pancetta, diced
2 tablespoons chopped sage
1 tablespoon chopped flat-leaf parsley
1 egg
salt and freshly ground black pepper
1kg turkey breast
olive oil

Method

  1. Tear the bread into large chunks and soak in cold water for 10 minutes. Squeeze the bread well to remove all liquid, then crumble it into a bowl.
  2. Heat a small saucepan over a medium heat. Add the butter, onion and pancetta and cook for 7–8 minutes, stirring often, until the onion softens but doesn't burn. Tip into the mixing bowl with the bread and add the sage, parsley, egg and lots of the salt and pepper. Mix well to combine.
  3. Preheat the oven to 180°C.
  4. Lay the turkey breast out on a chopping board, skin-side down. Push to one side the underfillet (the small fillet under the main part of the breast), but keep it attached. Lay the stuffing down the centre and wrap the turkey around the stuffing.
  5. Roll the fillet over carefully so the skin-side is uppermost. Take a piece of string, about 30 cm long, and tie it tightly around the thick end of the fillet. Continue to wrap the string around the turkey at a 2 cm interval from the first tie. Thread the string under and pull tightly to create a loop. Continue in this fashion until the turkey is evenly rolled and tied.
  6. Rub the rolled breast all over with oil and season well. Place in a baking dish and cook in the oven for 1 hour 20 minutes, or until the turkey is cooked through. Wrap the turkey in foil then rest on a warm plate in a warm place for 10–15 minutes.
  7. Carve and serve with roast potatoes, gravy and vegetables.
