Ingredients

3 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons sweet chilli sauce
2 teaspoons grated root ginger
2 garlic cloves, crushed
1.6kg whole chicken

Method

  1. Preheat the oven to 180°C. Line a baking dish with baking paper (which makes cleaning easier).
  2. Mix the hoisin, soy, sweet chilli, ginger and garlic together. Rub over the chicken, making sure you get into all the crevices.
  3. Place the chicken breast-side down in the baking dish. Cook in the oven for 45 minutes, or until the chicken is golden brown. Turn breast-side up and cook for a further 30 minutes, or until the skin is crisp. Check whether the chicken is cooked by inspecting the juices for any sign of blood (pinkness).
  4. Allow to rest for 10 minutes before carving. Serve with chargrilled corn salad.
