Ingredients

Quantity Ingredient
1.5kg easy-carve leg of lamb
oil, for cooking
2-3 rosemary sprigs, leaves stripped
salt and freshly ground black pepper
8 potatoes, peeled and halved
1 onion, cut into chunks
4-6 garlic cloves, skins left on
400g pumpkin, cut into wedges

Method

  1. Preheat the oven to 220°C.
  2. Place the lamb in a baking dish large enough to include the potatoes and pumpkin. Rub 1–2 tablespoons of oil over the lamb, then sprinkle with rosemary leaves and season with the salt and pepper.
  3. Cook in the oven for 20 minutes then reduce the temperature to 180°C. Add the potatoes, onion and garlic to the baking dish and cook for a further 30 minutes.
  4. After 30 minutes, turn the lamb and potatoes over in the baking dish and add the pumpkin. Return to the oven and cook for a further 30 minutes.
  5. After this time, check if the lamb is cooked to your liking. Insert a small kitchen knife into the centre of the roast and count to five. If the knife is warm, the meat is rare. If it’s bearably hot, the meat is medium. You’re aiming for medium to medium–rare. If necessary, cook for a further 5 minutes and test again. Once the lamb is cooked to your liking, transfer it to a warm plate, cover with foil and leave to rest in a warm place for 10 minutes.
  6. Return the vegetables to the oven to finish cooking, if necessary increase the oven temperature to crisp the vegetables.
  7. Carve the lamb and serve with gravy, the roasted vegetables and some steamed carrots and peas.
