Ingredients

Quantity Ingredient
500g minced chicken
100g grated haloumi
1 lemon, grated zested
2 tablespoons chopped flat-leaf parsley or sage
1 egg yolk
50g dry breadcrumbs
salt and freshly ground black pepper
8 slices prosciutto
oil, for cooking

Method

  1. Combine the chicken with the haloumi, lemon zest, chopped herbs, egg yolk and the breadcrumbs. Season with salt and pepper and mix together well. Shape the mixture into 8 sausages and wrap a slice of prosciutto around each one.
  2. Heat a barbecue grill until hot. Brush the sausages with a little oil and cook for around 10 minutes, turning once or twice. Serve with a green salad and tomato relish.

Note

  • Never cut into meat to see if it is cooked as the juices will escape. This especially applies to sausages.
