Salmon is a great fish to barbecue as the natural oils stop it from drying out and it holds its shape well.

Ingredients

Quantity Ingredient
2 tablespoons shoyu or tamari sauce
1 lime, grated zested
2 tablespoons chopped coriander leaves
2 tablespoons chopped mint
freshly ground black pepper
4 x 150g skinless salmon fillets
oil, for cooking

Method

  1. Mix together the shoyu, lime zest and herbs and season with the pepper. Cut the salmon into 2 cm chunks. Pour the marinade over the salmon and leave to marinate for 20 minutes, time permitting.
  2. Heat a barbecue grill until hot. Divide the salmon chunks evenly between 12 skewers and brush lightly with oil. Cook for 6–8 minutes, turning once or twice. Cook for 3–4 minutes, then turn to the opposite side and grill for another 3–4 minutes. The salmon should still be pink in the centre.

Note

  • Only bring out the food to be barbecued just before you are ready to cook it. Raw food shouldn’t be left sitting in warm weather or direct sunlight for any longer than necessary. This especially applies to seafood.
