Ingredients

Quantity Ingredient
2 tablespoons sichuan peppercorns
3 tablespoons salt
2 tablespoons oil
1 teaspoon sesame oil
2 skinless chicken breast fillets, cut into long strips
coriander leaves, to serve

Method

  1. Combine the Sichuan peppercorns and salt in a dry frying pan and cook over medium heat for around 3 minutes, stirring, until the salt turns golden. Crush using a mortar and pestle until very fine.
  2. Mix the oils together and mix with the chicken. Thread the chicken on to 12 skewers. Sprinkle 2 teaspoons of the Sichuan salt and pepper mix over the skewers.
  3. Heat a barbecue grill until hot. Cook the skewers for 8–10 minutes, turning once or twice, until cooked through. Scatter on the coriander leaves and serve with steamed rice and a green salad.

Note

  • When using skewers, metal is better than bamboo. Bamboo skewers have to be soaked (and even then they often dry out and catch fire), and re-usable materials are far better for the environment than disposable ones.
