You can barbecue the prawns as they are, or thread them onto skewers.

Ingredients

Quantity Ingredient
125ml light soy sauce
2 tablespoons lemon juice
1 tablespoon rice vinegar
2 tablespoons mirin
2 garlic cloves, crushed
1 tablespoon grated root ginger
oil
freshly ground black pepper
1kg raw prawns, peeled and deveined
lemon wedges, to serve

Method

  1. Mix together the soy sauce, lemon juice, rice vinegar, mirin, garlic, ginger and 1 tablespoon of oil and season with the pepper. Pour over the prawns and toss to combine.
  2. Heat a barbecue grill until hot. Thread the prawns onto skewers, if using, and brush lightly with oil. Cook for 1–2 minutes on each side, or until the flesh turns opaque. Serve straight away with lemon wedges and Asian soba noodle and vegetable salad
