Ingredients

oil, for cooking
1kg beef eye fillet
2 tablespoons butter
250g sliced swiss brown mushrooms
salt and freshly ground black pepper
olive oil, for cooking
2 onions, diced
2 garlic cloves, crushed
2 tablespoons plain flour
250ml red wine
375ml beef stock

Method

  1. Preheat the oven to 200°C. Heat a heavy-based frying pan over medium heat. Add a splash of oil and cook the beef for 8–10 minutes, turning so it browns evenly all over.
  2. Lift the fillet onto a baking tray and cook in the oven for 20 minutes. At this stage, check to see if the beef is cooked to your liking. Insert a small kitchen knife into the centre of the roast and count to five. If the knife is warm, the meat is rare. If it’s bearably hot, the meat is medium. Cook in 5-minute increments until done the way you like it, then remove from the oven, cover with foil and leave to rest in a warm place for 10 minutes.
  3. Meanwhile, return the frying pan to the heat. Add the butter and the mushrooms and cook for 10 minutes, stirring occasionally, until softened and golden brown. Season with the salt and pepper, then tip the mushrooms into a bowl.
  4. Return the frying pan to the heat and add a generous splash of oil. Add the onions and cook for 5 minutes, or until soft but not coloured. Add the garlic and cook for 2–3 minutes. Reduce the heat to low and stir in the flour. Cook for 2–3 minutes, stirring, then increase the heat to high, add the red wine and bring to the boil. Whisk well to ensure there are no lumps and cook for 2 minutes.
  5. Add the stock and return to the boil, whisking until well combined. Lower the heat and simmer for 30 minutes. Add the mushrooms to the sauce and adjust the seasoning.
  6. Slice the beef thickly and serve with the red-wine mushroom sauce and lots of Italian potatoes
