Ingredients

Quantity Ingredient
1 tablespoon thinly sliced root ginger
2 small red chillies, seeded and diced
2 kaffir lime leaves, thinly sliced
200g baby bok choy leaves, shredded
4 spring onions, thinly sliced
1 small handful, coriander leaves
2 tablespoons soy sauce
4 x 150g firm white fish fillets

Method

  1. Mix the ginger, chilli, kaffir lime leaves, bok choy, spring onion, coriander and soy sauce together.
  2. Line the inside of a bamboo steamer with a large square of baking paper. Arrange the fish in a single layer and spoon the bok choy mixture over the top.
  3. Set the steamer over a saucepan or wok of simmering water. Cover with a lid and steam for 10–15 minutes, or until the fish is cooked through. Serve with steamed rice and ginger stir-fried greens.
