Ingredients

Quantity Ingredient
1.6kg whole chicken
250ml chinese rice wine
250ml soy sauce
220g caster sugar
5cm piece of root ginger, sliced
6 spring onions, sliced
1 teaspoon sesame oil
2 cinnamon sticks
2 star anise
1 orange, zested

Method

  1. Select a large saucepan that will hold the chicken snugly and add all the remaining ingredients, except for the chicken. Bring to the boil, reduce the heat and then simmer for 30 minutes to allow the flavours to infuse.
  2. Place the chicken in the saucepan, breast-side down, then cover with a lid and cook for 30 minutes. Turn the chicken over and cook for a further 30 minutes.
  3. Cut into portions and serve with steamed rice and ginger stir-fried greens.
