Ingredients

Quantity Ingredient
2 tablespoons butter
2 tablespoons plain flour
750ml hot milk
1 teaspoon dijon mustard
200g grated cheese, (a mixture of parmesan and cheddar)
salt and freshly ground black pepper
500g Veal ragù
250g instant lasagne sheets

Method

  1. Preheat the oven to 180°C. Place a saucepan over medium heat and melt the butter, without browning. Add the flour and stir in well to form a paste. Reduce the heat and cook the flour for 2–3 minutes, stirring often.
  2. Increase the heat and add a ladleful of hot milk. Whisk in well, then continue to add the milk, a ladle at a time, until it is all incorporated and the sauce is smooth. Add the mustard, then reduce the heat and cook for 3–4 minutes, stirring often. Remove from the heat and stir in three-quarters of the cheese until melted. Season well with the salt and pepper.
  3. Spread half the veal ragù over the base of a lasagne dish. Top with a single layer of lasagne sheets followed by a layer of cheese sauce. Add another layer of lasagne sheets and spread on the remainder of the ragù. Add another layer of lasagne sheets and finish with a layer of cheese sauce.
  4. Sprinkle with the rest of the cheese and bake in the oven for 30–40 minutes, or until the pasta is cooked and the top is golden brown.
