As the name suggests, this is a simple, everyday sauce. It often becomes the base of other dishes, such as shepherd's pie, chilli con carne or taco mince. I often double the quantities, divide it into portions and freeze it. Dinner is never far away with a tub of bolognaise nearby!

Ingredients

Quantity Ingredient
oil, for cooking
2 onion, diced
2 garlic cloves, crushed
1kg minced lean beef
3 tablespoons tomato paste
250ml tomato purée
375ml beef stock
2 tablespoons chopped herbs, such as basil, thyme, flat-leaf parsley
salt and freshly ground black pepper
400g pasta of your choice, such as spaghetti or fettucine
freshly grated parmesan cheese, to serve

Method

  1. Heat a medium-sized saucepan over medium heat. Add a splash of oil and the onions and cook for 3–4 minutes, stirring often, until it softens slightly. Add the garlic and cook for a further 1–2 minutes, or until the garlic is fragrant. Add the beef and cook until well browned, stirring well. Add the tomato paste and cook for 1–2 minutes, stirring often.
  2. Add the tomato purée, beef stock and herbs and bring to the boil, then reduce the heat and cook for 10–15 minutes, stirring often. When the sauce has thickened to the desired consistency, check the seasoning and add salt and pepper, to taste.
  3. Bring a large saucepan of water to the boil over high heat. Add a good pinch of salt. Add the pasta and stir until the water has returned to the boil. Reduce the heat, cover the pan and cook the pasta at a fast simmer for 8 minutes. Check that the pasta is cooked, then drain well and toss with the bolognaise sauce. Serve with the parmesan.

Variations

  • Spicy bolognaise sauce Add 2 seeded and finely diced chillies along with the onions.

    Beef and mushroom bolognaise Add 150 g sliced mushrooms along with the onions.
