Ingredients

3 tablespoons olive oil
1 onion , diced
3 tablespoons slivered almonds
250g chicken breast strips
2 garlic cloves, crushed
2 teaspoons grated root ginger
300g long-grain white rice
1/2 teaspoon ground chilli
1 teaspoon ground cumin
2 cinnamon sticks
1/2 teaspoon ground turmeric
1 teaspoon ground coriander
150g greek-style yoghurt
salt and freshly ground black pepper
3 tablespoons roughly chopped coriander leaves

Method

  1. Heat a heavy-based saucepan over medium–high heat. Add the oil, onion and almonds and cook for 5–6 minutes or until the almonds start to brown.
  2. Add the chicken, garlic and ginger and cook for another 3–4 minutes, stirring often. Add the rice, spices and yoghurt and stir to combine.
  3. Add 375 ml of water. Season with the salt and pepper, cover with a lid and bring to the boil.
  4. Reduce to a simmer, cover the pan and cook for 15–20 minutes, or until all the liquid has been absorbed. Remove the pan from the heat and allow to stand for 5 minutes, covered, before serving.
